When I first started baking for our farmstand, I thought of liquids as the “easy” part of a recipe. Add the milk, maybe some water, stir it all together—and move on.

But baking has a way of humbling you.

I remember one batch of muffins that turned out dry, even though I followed the recipe. Another time, my bread dough felt impossible to work with—too sticky one day, too stiff the next. Same ingredients. Same measurements. Completely different results.

  • Even how you measure

On a humid day, your flour may already contain more moisture. On a dry day, it may need a little extra liquid.

Understanding this difference helps you troubleshoot quickly when something feels “off.”

Now when I bake, I pay attention to how my dough or batter feels—not just what the recipe says.

I ask:

  • Does it need a little more time to hydrate?

Because once you understand hydration, you stop guessing.

You start adjusting.
